Why did the USS West Virginia have her floatplanes atop Number 3 turret and also her aft catapult, while in Pearl Harbor, during the attack? áI was under the impression that US Navy SOP was for the aircraft to be jettisoned and left at the Ford Island Seaplane landing for normal servicing until needed when the BB's departed harbor.

SOP doesn't really equate to 100% of the time. I've seen other photos of BBs at Pearl in 1941 with a float plane or two aboard.

You're right.  I did some further reading on this site and found out the Oklahoma and Californa had some of their float planes aboard when the attack began.
